Top 10 Cheap Veggie Meals

It is estimated that around 1.2million people are vegetarian in the UK and many more choosing to go green with their meals. People are even trying out ‘meat free Mondays’ to reduce the cost of their food shop. We’ve brought you 10 of our favourite vegetarian meals which are great on a budget.

1. Vegetarian Lasagne

Vegetarian Lasagne Veggie lasagne is so easy to make and a great hearty meal. It’s cheesy but it’s also healthy as you can pack it with as much or as little veg as you like. This recipe from All Recipes is packed with spinach, carrots, onions and aubergines for a healthy filling meal and an alternative to a quorn based veggie lasagne. You can switch any of these vegetables around and it still works. Another great combination is peppers, mushrooms and onions.  It’s a great dish to have on its own or served with salad and the recipe serves 6 so you may even have some leftover for lunch! Serves: 6. 2. Sweet Potato Burrito Bowl

It’s a common misconception that vegetarian food is boring as it’s only vegetables but that’s not true. This recipe from Christie’s Lifestyle has taken vegetarian food across the globe with her Mexican inspired Sweet Potato Burrito Bowl. This one-pan recipe even saves on the washing up and we love how simple it is to make. Using sweet potato can bulk a dish out and make it really filling without breaking the bank. Serves: 4. 3. Vegetarian Burgers

Shop bought veggie burgers have been known to have the consistency and texture of cardboard and there is no reason you should miss out during BBQ season. Making your own veggie burgers is simple and means you can have a tasty treat. This recipe from Great British Chefs uses mushrooms, lentils and potatoes to create a tasty treat. You can save even more money by making a large batch and keeping them in a freezer for another time. Serves: 4. Approximate cost per serving: £1.20.

4. Quorn Sausage Cassoulet

Sausage CassouletCassoulets are perfect winter warmers and can be made with filling pulses and potatoes to make this go even further. This recipe comes straight from the Quorn website and is packed with healthy vegetables and plenty of beans. Not only is this tasty, it’s filling and full of protein. Serve with mash. Feel free to substitute the quorn sausages for your favourite veggie alternative. Serves: 2. Approximate cost per serving: £2.05.


5. Vegetable Curry

Curry makes a great midweek meal and you can literally use any ingredients you like. Potatoes are a great addition to a vegetable curry to bulk it out and make your portions go further. This BBC Good Food recipe serves 8 so is great for entertaining and you can always freeze the leftovers. The recipe is packed with healthy ingredients such as courgettes, peppers, onions and butternut squash and doesn’t take a lot of preparation - perfect for busy evenings. Serves: 8. 6. Stuffed Peppers

Stuffed PeppersStuffed peppers are so easy to make and can even be prepared in advance and grilled later in the day. If peppers aren’t your thing, feel free to substitute them in this great recipe from Good to Know with mushrooms, courgettes or even squash. This recipe uses a delicious couscous filling but you can use rice or quinoa instead. Top with extra cheese for a filling and tasty meal. Serves: 4. Approximate cost per serving: £1.75.

7. Veggie Frittata

1.Egg’s are a great source of protein and a brilliant starting point for a meal. This simple but tasty veggie frittata recipe from Budget Bytes really hits the spot and can be altered to suit your tastes.  The possibilities for flavour combinations are endless or you could stick to this simple red pepper and feta recipe for a filling budget friendly dinner.Serves: 4. 8. Spicy Parsnip Soup

Soups are really easy to make in large quantities and very filling. You can make a vegetable soup with pretty much any vegetables you have left in your fridge. This recipe from Jamie Oliver for this spicy parsnip soup is delicious and won’t cost you much time or money in the kitchen. Serves: 4. Approximate cost per serving: £1.50.

9. Tomato Pasta

Tomato PastaIf you’re in need of a quick and easy dish then pasta is perfect. We love this simple pasta recipe from Deliciously Ella and it takes less than 15 minutes to prepare and cook. There’s a good portion of vegetables so it’s nice and healthy but at the same time the pasta makes this a filling dish. We also think this meal would suit fussy children and will please all of the family. Why not add even more vegetables to really stretch the portions out. Serves: 4. Approximate cost per serving: £1.34.


10. Vegetable Chilli

Having a nice vegetable chilli can be really filling and healthy and great if you’re not a fan of the texture in quorn mince. Jamie Oliver has a great veggie chilli recipe that’s warming, full of flavour and rated as super easy to make.  Make this go even further by adding extra beans and then serve with rice and tortillas. You can also tailor this recipe to include all of your favourite vegetables just by keeping the base sauce the same. Serves: 4. Approximate cost per serving: £1.77.
